I'll check into the wages thing later..all was working fine last time i looked. I assume you're aware that the wages will be paid each day while construction is taking place? - e.g the helicopter takes 100 days to make so will pay wages for 100 days before actually making anything. (And this needs to be reflected in the eventual retail price)
That said.. the aircraft hangar is a new building type ('Extended Manufacturing') which uses 3 items to make another - wouldn't be surprised if its not handling that properly. To save me some digging, could you confirm if this issue seems to be happening only on buildings using that 3 items -> 1 process?

Problem with the engine factory
Whilst doing my 24 hour shift i was able to put sheet metal into the factory, then all of a sudden ,I am not able to put any in now, so engines have now stopped producing.
Because there's no sheet metal in the building and no prices set for it, the item has been removed from the active goods list for that building. The add to stocks screen is currently only listing 'active' items - thats fixed in 0.69.5 so it always shows any items required for production.
Meantime, you could work around this by temporarily setting a buy price for sheet metal, which should then make it appear in the 'add to stocks' list
