Let your auto updater run coz asteroid mining kits are available to purchase in space station!!!
Find a star system with an asteroid belt, it will be the brighter dots that are in an orbit around the sun. Fly into the belt and find an asteroid. Get close enough to the asteroid where you will see a box pop up to start mining. As long as you have your mining kit, your all set.
Only thing I saw that didn't work well was if you were to open new boxes or get slightly out of skew with the asteroid it would stop and you would have to start over again.

All systems have an asteroid belt. For those who have problems seing it:
Press F5 for system map
In the system map there are croses that represent the location of a planet, the cross has the name of the planet on top. There are yellow dots that make a circle around the star representing the planets orbits. And last, if you look closely there is another circle in the map sorrounding the star of white bluish irregular shaped dots. That is the asteroid belt, the white bluish irregular shaped dots sorrounding the star. Every system has an asteroid belt.
Press F5 for system map

Mining works for me.
- the fact the kit doesn't show in your inventory is, I imagine, just a bug
- I'm not convinced the whole system is working as it should, but it definitely works. What I had to do was approach an asteroid, get verrrry close; kill the drives so your speed is zero; then press F7 to bring up ship's inventory. With the inventory screen open, the mining dialogue appears and you can click the button.
I'd be surprised if that's the way mit intended it to work (he was prolly just drunk again) but it does work for me. I've just spent ten minutes earning, er... about 20cr. Great.

I was able to mine, I had to be really, really close to the asteroid to mine it. And had to approach it very slowly in order for the box to appear. Center the asteroid in your window and you should have the box pop up.
While I agree you shouldn't be able to move about in space or perhaps shoot weapons while mining, you should still be able to do trivial things such as check prices or inventory while mining. Just my opinion though.
